CACTUS

Cactus, the overlooked plant in the garden.

Perhaps it is time to give it another look.

In very simple steps, you can try these dishes.

Whatever you choose to call this dish, your opinion will never be the same after you have tried it. First, you have to be bold enough and a bit adventurous to do so. If you like okra, you will like this. You have the blended taste of okra and green beans, without the mushy feel to it.

Here is what you need for this dish.

1. One whole piece of Cactus.

2. One small onion.

3. Two tablespoonful of olive oil.

4. Some seasoned salt.

5. Two teaspoonful of parmesan cheese.

6. One teaspoonful of bread crumbs

Preparation

1. Wash the cactus. Then, laying the cactus flat against a hard surface, like a cutting board, place a knife almost level against the flat side of cactus, and carefully slice off the thorns from both sides. Trim around the edges and ends.

2. Cut the cactus in pieces of about 1/4 inch wide, and 1.5 inches long. Wash and rinse in cold water.

3. Boil the cactus in water for about 6 to 10 minutes. Drain and rinse, then set aside.

4. While the cactus is cooking, peel and slice the onions.

5. In a pan, warm up the olive oil and seasoned salt and sauté the onions for about a minute. Don’t overcook it.

Serving Suggestion

1. Warm up Tortilla, and place them in a plate.

2. Warm, arrange the cooked cactus in the middle of the plate.

3. Sprinkle some parmesan cheese and bread-crumbs on top.

4. Dish the sautéed onions in the middle of the cactus.

5. Sprinkle a little more of the cheese and bread-crumbs on top.

Cactus Appetizer.

What you need for this dish

A. Some cactus

B. One egg

C. Quarter cup of milk

D. Some seasoning (Garlic, Paprika, Salt, etc.)

E. A cup of flour

F. Some cooking oil for frying

Preparation

1. Clean, rinse and cut cactus into 1/2 inch by 1.5 inch pieces.

2. Beat eggs into milk. (Please do not use the shells).

3. In a bowl, mix seasoning and flour.

4. Dip the cactus pieces in the egg-mix.

5. Roll the dipped cactus into flour until covered completely.

6. Set aside and allow flour to bind to the cactus.

7. In a frying pan with about a half inch of oil, heat your oil and fry the cactus till golden brown.

8. Remove from oil and drain.

Serving Suggestions

Best served warm with any dip or sauce. The three sauces presented here are:

¨ Sweet Roasted Garlic Balsamic Dressing, Barbeque Sauce and Pesto Sauce.

Between the Sauces and the fried Cactus are five pieces of ‘ Amma Anye Gyan’ .

If I am not able to resolve the issue with the pictures, I will find someone else to do it.
